Spring is officially here, and we couldn’t have asked for a better way to welcome the season than with our Spring Open House! 🌸 Thank you to everyone who stopped by to shop, snack, and celebrate the start of this fresh new season with us. We loved seeing the shop buzzing with energy, filled with beautiful finds and delicious homemade treats crafted by Jennifer.

As we reflect on the joy of our Open House, we wanted to share the sweet treats that made the event even more special! Try these at home and bring a little bit of Linen & Clove’s seasonal magic into your own kitchen.  A huge thank you to Jennifer for sharing her baking talent with us AND for sharing her recipes with you!

Carrot Cake Cupcakes 🥕🧁

A springtime classic, these moist and spiced cupcakes are topped with a rich cream cheese frosting.

Cupcake Ingredients:

  • 1 1/3 cups flour

  • 1 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/2 tsp. salt

  • 1 tsp. cinnamon

  • 3/4 tsp. ground ginger

  • 1/4 tsp. ground nutmeg

  • 1/2 c. vegetable oil (or preferred oil)

  • 1 c. light brown sugar

  • 2 eggs, at room temperature

  • 1/3 c. unsweetened applesauce

  • 1 tsp. vanilla extract

  • 1 1/2 cups peeled, shredded, and chopped carrots

  • 3/4 c. chopped walnuts

Frosting Ingredients:

  • 8 oz. cream cheese, at room temperature

  • 1/2 c. unsalted butter, at room temperature

  • 4 cups powdered sugar

  • 1 tsp. vanilla extract or vanilla bean paste

  • 1/8 tsp. salt

Instructions:

  1. Preheat oven to 350°F. Line a muffin pan with cupcake liners.

  2. In a bowl, whisk together dry ingredients. In another bowl, mix oil, sugar, eggs, applesauce, and vanilla, then fold in the carrots.

  3. Combine wet and dry ingredients, then fill liners 3/4 full. Bake for 21–23 minutes.

  4. For frosting, beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and salt, then beat until fluffy.

  5. Frost cooled cupcakes and enjoy!

 

Lemon Crinkle Cookies 🍋

Bright and zesty cookies with a crinkled powdered sugar finish.

Ingredients:

  • 1 box lemon cake mix

  • 2 eggs

  • 1/3 cup vegetable oil

  • 2 tbsp fresh lemon juice

  • Zest of 1 lemon

  • Powdered sugar

Instructions:

  1. Mix all ingredients in a bowl; let sit for 10 minutes.

  2. Roll dough into powdered sugar.

  3. Bake at 375°F for 7-9 minutes. Cool before serving.

Cookies & Cream Cookies 🍪

Perfectly soft cookies packed with Oreos and white chocolate.

Ingredients:

  • 1 cup butter, softened (or 1/2 c. butter, 1/2 c. shortening)

  • 1/2 cup packed brown sugar

  • 1/2 cup white sugar

  • 1 package Cookies & Cream pudding mix

  • 2 eggs (room temperature)

  • 1 tsp. vanilla

  • 2 1/2 cups flour

  • 1 tsp salt

  • 1 tsp baking soda

  • 12 Oreos, chopped

  • 1/2 cup white chocolate chips

Instructions:

  1. Cream butter and sugars for 4 minutes.

  2. Add pudding mix, eggs, and vanilla; mix for 2 minutes.

  3. Mix in flour, baking soda, and salt on low speed.

  4. Fold in Oreos and white chocolate chips.

  5. Roll into balls and chill for 3-6 hours.

  6. Bake at 350°F for 8 minutes.

Easter Bunny Bites 🐰

The cutest spring treat with pretzels, candy melts, and M&Ms.

Ingredients:

  • Pretzel snaps

  • White candy melts

  • Spring-colored M&Ms

  • Fine tip food marker (optional)

Instructions:

  1. Cut some M&Ms in half (for ears).

  2. Place pretzels on a microwave-safe plate, top with a candy melt.

  3. Microwave at 50% power in 30-second intervals until softened (about 90 seconds total).

  4. Quickly place a whole M&M in the center and two halves as ears.

  5. Let set for 15 minutes, then add a face with a food marker if desired.
