Sweet Treats from Our Spring Open House
A few of the recipes everyone asked for…
One of our favorite parts of hosting an open house at Linen & Clove is welcoming everyone into the shop with a little something sweet. While you wander through the latest seasonal pieces, sip a drink, and catch up with friends, there’s always a table filled with homemade treats.
This season, Jennifer made a beautiful assortment of spring favorites, bright lemon cookies, crunchy homemade granola, cookies & cream cookies, and the sweetest little bunny bites that were almost too cute to eat.
So many of you asked for the recipes that we thought it would be fun to share them here. If you missed the open house (or just want to recreate the treats at home), here they are.
Lemon Cheesecake Cookies with Lemon Glaze
These soft cookies were one of the first things to disappear from the table. They’re light, bright, and perfectly lemony with a creamy cheesecake base.
Ingredients
¾ cup granulated sugar
4 tablespoons unsalted butter
4 ounces full-fat cream cheese
1 large egg
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 lemon (juice + zest)
1¼ cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
½ teaspoon cornstarch
2 tablespoons instant lemon pudding mix
Lemon Glaze
½ cup powdered sugar
Fresh lemon juice
Directions
-
Set the butter, cream cheese, and egg out about 1 hour in advance so everything reaches room temperature.
-
In a large bowl, cream together the sugar and butter with a hand mixer until light and fluffy.
-
Add the cream cheese and beat until smooth. Mix in the egg, vanilla extract, lemon extract, 2 teaspoons lemon juice, and 1 tablespoon lemon zest.
-
In a separate bowl combine the flour, baking powder, salt, cornstarch, and pudding mix. Add to the wet ingredients and mix just until combined.
-
Cover the dough and chill for 45 minutes.
-
Preheat oven to 350°F. Using a tablespoon, scoop dough and place cookies 2 inches apart on a parchment-lined sheet pan.
-
Bake 9–11 minutes (10 minutes is perfect). Do not overbake.
-
Cool completely.
Glaze
Whisk powdered sugar with 2–3 teaspoons lemon juice until a thick glaze forms. Spoon over cooled cookies and allow to set.
